I love cooking with oats, but am not overly fond of oatmeal. I find the texture a little unappealing. When I needed a quick and simple breakfast that was also healthy and filling, I knew I wanted to incorporate oats, but in a little different way. After a little experimenting I came up with this deliciously fresh and healthy alternative. I love the crunch. I love the sweet cinnamon-y flavor. I love that it keeps me satisfied all morning long. And I love that it also seems to curb my sweet tooth, despite having no added sugar.
Slivered almonds make a great substitute for the chopped pecans if you want to mix it up a bit. My mom also likes preparing her oatmeal according to the package instructions and then adding the other ingredients before serving. She happens to like gloopy oatmeal.
